What type of cement/concrete do I use for making broken glass countertops?
I am actually wanting to know what I use to MAKE the countertop. My research shows Portland Cement Type I. Is that in agreement with what anybody else has used?

I work as a flooring associate at The Home Depot at my store, and I'd thought I'd pass along some information for you regarding setting up your broken glass (or Vetro Rotto) countertops.
You can really use any sort of cement or resin-based adhesive to set it down. Ones I would recommend to use are patching compound or small cement in a bag. Bagged cements are better since you can also use tints and change the color of the cement between the broken glass, leaving you with a colored surface, much like grout.
I would do it this way since if you are to put them in a mold, it would be easier to use a sort of cement and pourable material.
You can use thin-set mortar, but be careful with any materials when it comes to tinting and later on, sealing the materials, as even a surface like cement needs to be sealed properly so that it can last a long time.
